It’s winter and I am beginning to feel chili

Winter has arrived and suddenly all I’m craving is soups, stews, and chili!

My typical concern with chili is that it’s easy to overeat and tends to be quite carby, considering all of the beans. Tonight, I am making a bean-free chili and it’s beginning to smell amazing!

This recipe makes a large batch, so I suggest inviting friends over to help you feast. Otherwise, you could just eat it yourself throughout the week, freeze part of it for later, or simply just cut the ingredients in half to make a smaller portion.

Ingredients

  • 5lb lean ground beef (96/4, if possible)
  • 5 garlic cloves, minced
  • 1 yellow onion, chopped
  • 1 can (28oz) chopped tomatoes, with juices
  • 6-8 tbs. chili powder
  • 2 tsp. dried oregano
  • 1 tsp. ground cumin
  • salt and freshly ground pepper to taste
  • 1/3 cup cornmeal
  • 2 cups unsalted beef stock
  • non-fat sour cream, chopped red onion, low-fat grated cheddar cheese and/or cilantro for garnish

Method

  • In a large, heavy saute pan over medium-high heat, brown half of the beef, about 10 minutes.
  • Using a slotted spoon, transfer beef to a slow cooker. Repeat with remaining beef.
  • Add garlic, yellow onion, tomatoes with juices, chili powder, oregano, cumin, salt, pepper, cornmeal, and stock to slow cooker and stir to blend.
  • Cover and cook for 6 hours according to manufacturer’s instructions.
  • Skim fat off surface of chili. Ladle chili into warmed bowls and garnish with sour cream, red onion, cheese, and/or cilantro. Serves 8-10

  1. I had to make a “healthy” meal for a recent potluck. I never thought that 5 lbs of meat could be eaten so quickly! Everybody loved this and wanted more!

I made this tonight for dinner and it was sooo good! i used turkey instead of beef and since i didn’t have any cornmeal i used a can of the corn salsa from trader joes (that you blogged about previously). It was a mix of sweet and spicy and delicious . My boyfriend couldn’t get enough of it! Thank you for the great recipes, keep em coming 🙂
