Recipe: Jerk Drumsticks and Grilled Mango Salsa

JERK DRUMSTICKS AND GRILLED MANGO SALSA

  • Prep: 20 minutes
  • Grill: 25 minutes
  • Serves: 4

 

Ingredients:

  • 4 chicken drumsticks
  • 2 tbs pickapeppa sauce
  • 2 tbs Jamaican Jerk seasoning
  • 1 mango, halved, seeded, peeled
  • 1 2-inch thick slice of red onion
  • 1 jalapenp pepper, halved, seeded
  • 1 tbs snipped cilantro
  • 1/2 tsp zest from lime peel
  • 1 tbs lime juice
  • 1 tsp honey
  • 1/2 tsp ground coriander
  • 1/4 tsp salt

Method:

  • brush drumsticks in pickapeppa sauce
  • sprinkle jerk seasoning evenly over chicken and rub it into the chicken with your fingers

For a charcoal grill

  • Arrange medium-hot coals around a drip pan and test for medium heat above pan
  • Place drumsticks, mango, onion, and jalapeno pepper on grill rack above the drip pan
  • cover and grill for 25-30 minutes or until chicken is thoroughly cooked (180 degrees F) and until mango, onion, and jalapeno are tender and crisp, turning once throughout the 25-30 minutes

For a gas grill:

  • preheat grill and reduce heat to medium
  • place drumsticks in a roasting pan and place on rack over a burner that is turned off
  • Place mango, onion, and jalapeno directly onto the same rack and over the burner that is turned off
  • Cover and grill using instructions above

For Salsa:

  • Once the mango, onion, and jalapeno have cooled, chop them and combine them in a medium bowl, adding cilantro, lime peel, lime juice, honey, coriander, and salt
  • Serve as a side dish for your drumsticks
