Recipe: Paleo Chocolate Chip Cookies

Searching for healthy recipes that taste amazing often feels like digging for gold. Cooking is a therapeutic process for me, but their is nothing that pisses me off more than slaving away in the kitchen for a meal that leaves me unsatisfied.  I don’t eat dessert often, but when I do, I want it to taste yummy, be somewhat healthy, and I want to wake up the next morning with a lean and forgiving physique and pretend like it was all just a dream and never really happened. Can you relate?

I’m excited to share yet another healthy and forgiving dessert recipe with you!

This recipe can remain guilt-free as long as you can control yourself and limit yourself to a cookie or two. If you think you could eat the whole batch, then plan to invite a couple of friends over, save the recipe for a pot-luck, freeze the leftovers, or cut the ingredients in half or quarters.

Enjoy a cookie or two and don’t wake up feeling like you have to pay for it!

RECIPE

Dry Ingredients

  • 3/4 cup coconut flour
  • 1/4 teaspoon Sea Salt

Mix dry ingredients and set aside

Wet Ingredients

  • 1/2 cup melted coconut oil
  • 1 cup coconut milk (if you are not on a strict Paleo diet, then you can substitute unsweetened almond milk or regular milk)
  • 6 eggs
  • 1 Tablespoon vanilla extract
  • 2-3 dropperfuls of Vanilla liquid stevia
  •  1 cup dark chocolate cocoa chips (if you are not on a strict Paleo diet, then you can substitute dark chocolate chips, peanut butter chips, etc)

Method

  • Turn on oven to 350 degrees
  • Grease a baking sheet
  • In a food processor or Vitamix (using a low setting), whip the 6 eggs
  • Add coconut milk, blend slowly to mix
  • Add 8+ drops of liquid stevia, blend slowly to mix
  • Add coconut oil, blend/pulse on low to mix
  • Add dry ingredients and blend/pulse gently to mix
  • Taste-test 1/4 tsp of the batter. Add more stevia if your pallet requires more sweetness
  • Once the flavor is adjusted to your taste-buds, add chocolate chips and stir
  • Drop spoonfuls onto a foil-lined baking sheet sprayed in coconut oil cooking spray
  • Bake for 20 minutes

Only indulge if you have completed at least 1 hour of exercise for the day!
