Rubs That Rock! Four Herb Rub for Beef, Pork & Chicken

Summer is here! It’s time to get social, get lean, and get some vitamin D!

My barbeque makes it so easy to eat tasty AND lean foods. So, this summer’s nutrition blogs will be devoted to healthy, hearty bbq recipes! You don’t have to ditch your friends to get in shape! Hell, invite em over for a bbq pot-luck and request that everybody brings one meat and one veggie dish or salad. Feel free to send some of these recipes to your guests!

Marinade 411

  • Mix marinades in glass bowls only
  • Place marinades in refrigerator. Never marinade at room temperature
  • Soak foods evenly by turning food throughout marinade process
  • Never re-use marinades that have contact raw meat
  • If you wish to re-use marinade as a sauce, then make sure to boil it to destroy bacteria
  • Never reuse marinades

RUBS:

1) FOUR HERB RUB (Great for Beef, Pork, Chicken)

  • Using a cutting board……
  • slice 2 cloves garlic
  • 1/4 cup diced basic leaves
  • 2 sprigs fresh thyme
  • 4 mint leaves, chopped
  • Combine all spices with 2 tbs olive oil, 1/2 tsp salt, and 1/2 tsp black pepper
  • 2) CILANTRO PESTO MARINADE (Great for Pork, Chicken, Fish)
  • In a small glass bowl, combine:
  • 1/2 cup chopped cilantro (firmly packed)
  • 1/2 small red onion, chopped
  • 1/4 cup lime juice, freshly squeezed
  • 2 tbs Worcestershire sauce
  • 1/2 tsp ground cumin
  • 1/2 tsp ground oregano
