Weight-loss tip of the week: Chop and cook your veggies for the entire week in less than 1 hour!

Weight loss requires planning!

Throughout my years as a figure competitor, I have learned that establishing a routine works best for weight-loss. Sometimes the easiest way to establish a routine results in eating the same foods every day. I know how much that sounds boring to many of you, but adding a variety of low-calorie sauce is all you need to feel like you are eating something different every day!

I am a huge fan of time-efficiency! So, I usually spend one day per week prepping my food for the entire week. After grocery shopping, chopping, cooking, and washing a dish, I feel guilty for letting my hard-earned efforts go to waste….and that becomes my trick to avoid eating out during the week.

In order to save money, time, and dish-washing, I prepare 1 weeks-worth of veggies in advanced. It only takes me 1 hour and 1 dish to clean! My recipe can easily be modified to better-suit your palate. This is all I do:

1) Shop at Trader Joe’s for:

  • 1 package of Organic Zucchini (4-8 zucchinis)
  • 1 Whole eggplant
  • 1 package Organic red bell peppers (2 peppers)
  • 1 organic sweet onion
  • 1 package Fresh Organic Rosemary
  • Salt and pepper to taste (this will last you months!)
  • Grape seed oil (this will last you months!)

Method:

  • Preheat your oven to 375 degrees
  • Chop eggplant, zucchini, red bell-pepper, and sweet onion into large cubes
  • Rinse fresh rosemary and peel herbs from stem. Mix these herbs into veggies while adding salt and pepper to taste
  • Drizzle 2-3 servings of healthy high-temperature cooking oil to veggie mixture and lightly toss. I recommend grape seed oil
  • Place chopped veggies in 1-2 large Pyrex dishes (line dishes with tin-foil for easy clean-up), transfer these to the oven for 30-40 minutes, stirring every 10 minutes until all veggies are cooked thoroughly

Complete your meal:

Use your food scale to measure out 5-6 ounces of veggies (for women) and 8-10 oz (for men) for lunch and dinner meals. Make sure to include 4 oz of meat (for women) and 6-8 oz of meat (for men) for each serving of veggies.
