Island Meatloaf

I started getting a little bored of my chicken meatloaf during Covid-19 and discovered ground pork for the first time at Trader Joe’s. I’m one of those “weirdos” who likes sweet with savory…the kind who likes pineapple on pizza. So, I got a little creative in the kitchen one night and created a sweet and savory pork and pineapple meatloaf. My neighbors all love it and so do I. Please share your thoughts! Note: A baking thermometer is needed for this dish. You can usually find one at CVS or Rite Aid for a few bucks.

Ingredients:

  • *2 lbs ground pork (80% lean/20% fat)
  • *1/3 cup Island Soyaki + 1 tbsp (I prefer Trader Joe’s brand)
  • *1 & 1/2 Tbsp Hoisin Sauce (I prefer Kikkoman’s gluten-free version)
  • *2 Red Peppers, diced (I use a Vidalia Chop Wizard for this step: Amazon)
  • *1/2 yellow onion, diced (I use a Vidalia Chop Wizard for this step: Amazon)
  • *1/2 14 oz can of pineapple chunks, drained (save liquid for later use)
  • *1 cup cornflakes (Amarynth flakes may be substituded to avoid GMOs)
  • *1/3 tsp salt
  • *1/3 tsp pepper

Method:

  1. Mix 1/3 cup Island Soyaki, 1 Tbsp Hoisin Sauce, & 1 Tbsp pineapple juice reserves with ALL other ingredients in a large mixing bowl. Save additional sauce for later use. I recommend using your hands to really mix the ingredients well.
  2. Cover & store in refrigerator for 1-2 hours, allowing for a short marinade process.
  3. Preheat oven to 400 degrees for 10-15 minutes.
  4. Transfer all ingredients from mixing bowl to a metal or glass oven-safe casserole dish. I usually use a 9 inch x 9 inch dish that is 2 inches deep. You may use a fat-free cooking oil spray for the casserole dish prior to adding the meatloaf.
  5. Coat the top of the meatloaf with remaining 1 tbsp Island Soyaki & a drizzle of Hoisin Sauce (1/2 tbsp or less), using a spoon to spread the sauces over the surface.
  6. Bake on center rack for 45-75 minutes or until internal temperature reaches 165 degrees (pop the thermometer in the center around 45 minutes in to check internal temperature & make sure to remove it prior to additional baking).
  7. Lightly pour about 1/4 cup of leftover pineapple juice reserves over the top of the meatloaf once it’s cooked for about 45 minutes.
  8. Remove from oven once internal temperature has reached 165 degrees. Allow the meatloaf to cool on the stovetop for 20-30 minutes prior to serving.
