Recipe: Quick, Simple, & Clean Spicy Shrimp & Tomato Soup
This recipe is simple… even for those who are intimidated by their kitchens! All you need is 4-6 ingredients and 5-10 minutes. This is my go-to dinner recipe when I need something fast and filling (with minimal calories).
Ingredients:
- Fat-free coconut oil cooking spray to lightly coat the pan (available at Trader Joe’s)
- 3.5-4 oz medium cooked frozen shrimp-thawed (available at Trader Joe’s in a purple bag)
- 1 Medium-sized tomato (about 5 oz), diced
- 1-3 Garlic Cloves, peeled and minced (optional) OR up to 2 Tbs of jarred, minced garlic (Trader Joe’s)
- Frank’s Original Red Hot Sauce to taste (Whole Foods, Sprouts, Ralph’s, Safeway)
- 1 Cup Water…or less (Optional)
- Salt and pepper to taste
Method:
- Heat pan over medium heat after coating it with fat-free coconut oil spray for one minute
- Add minced garlic and sauté for 1 minute
- Add diced tomato and thawed shrimp and stir for 1-2 minutes
- Add Frank’s Red Hot Original to taste…maybe start with 4-6 Tbs for your first batch. Continue to stir frequently for 2-4 minutes
- Optional: Add 1 cup of water when you start to add the hot sauce. This will turn your stir-fry into more of a soup and will help you to feel fuller and more satiated. You might cook it for an additional minute to heat up the additional fluids
- Enjoy with 1/2 an avocado, if necessary
