RECIPE: Shredded Lemon Cilantro Chicken

Barbeque season is slowly coming to an end, so I am exploring easier and tastier ways to prep my food for the week. It’s time to dig out the crock pot from the back of the cabinet and slow cook some lemon cilantro chicken!

I love this recipe because it only requires 4 ingredients, 1 dish to clean, 0 chopping, 0 prep time, cooks while I am out and about, and leaves me with 5 days worth of healthy, juicy, and flavorful shredded chicken that can be combined into stir-fries, cold chicken salads, or eaten as-is hot or cold.

Ingredients:

  • 20 chicken breast tenders or 5 whole chicken breasts
  • 1 large bunch cilantro, rinsed
  • 1 lemon, quartered
  • 1/4-1/2 cup chicken broth

Method:

  • Place the cilantro on the bottom of the crock pot
  • Place chicken on top of cilantro
  • Squeeze the quartered lemon over the chicken and place lemon slices on top
  • Pour chicken broth over the ingredients
  • Plug in crock pot and turn to low setting for 6-7 hours
  • Once chicken has finished cooking, carefully remove and discard the cilantro and lemon slices
  • Using two forks, shred the chicken while still in the crock pot
  • Transfer chicken to a glass tupperware dish to cool to room temperature before storing in the refrigerator
  • Enjoy!

Remember that 1 serving of chicken for women is 4 oz. and 1 serving for men is 6 oz. Use your food scale to portion out each meal. Doing so will assure that you get at least 1 serving of this dish for each day of the 5-day work-week.

  1. I have made shredded chicken in the crock pot before, but I like your recipe much better!! I made mine a little more spicy using a buffalo sauce (Syberg’s, from a St. Louis restaurant) and my husband, friends, and I all loved the end result! And it was so easy! Thanks Lauren!

  2. I allow myself to be naughty 1 night per week…..usually on a Saturday or Sunday. I try to sleep more that day to make up for at least 1 meal I would otherwise eat.

    I make sure to do cardio on an empty stomach that day and eat less overall. I still eat every 3-4 hours, but may limit myself to 100-150 calories/meal instead of 300. Does that make sense?
