Spicy Chicken (or tuna) Boats
This lil recipe only takes ten minutes to prepare and makes a great snack or meal that can be enjoyed for three to four days.
Ingredients:
- 2 Ripe Avocados, pitted and peeled
- 2 Cans (12.5 Oz each) Premium Chunk White Chicken in Broth. I prefer the orange cans from Trader Joes OR 3 5-Oz cans of tuna in water, drained
- 3 Green Onions (or more), thinly sliced
- Juice of 1.5-2 limes
- 1.2 Jalapeno, minced
- 1 Tbsp (or more) minced fresh cilantro
- 1/2 Tsp Chili Powder
- 1/2 (or more) Tsp Salt
- 1/2 tspn (or more) Black Pepper
- Endives, separated into leaves
- Trader Joe’s Aoli Garlic Mustard Sauce (optional) to taste
Method:
- In a medium to large bowl, mash the avocados with a fork, leaving them slightly chunky
- Add the chicken or tuna to the bowl, flaking it apart with a fork, and mix to combine with the avocados. Add the onions, juice of 1 lime, jalapeño, cilantro, chili powder, salt and pepper, and mix well. You might also add 2-4 Tbsp of the Aoli Garlic mustard sauce for a bit more spice.
- Spoon the chicken or tuna mixture into the endive leaves. Sprinkle a dusting of chili powder. Squeeze the juice from the remaining lime over top and serve.
- weigh out about 6 oz of the mixture and enjoy with as many endives as you wish.
