Breakfast of Champions
Mondays are tough enough already! My alarm clock sounded at 5:15AM this morning and I decided that today was going to be a great day to start fresh. I don’t know about you, but I tend to enjoy food a little bit more over my weekends. As a result, I like to begin my Mondays by eating a low-carb breakfast. Today’s breakfast was so delicious that I felt inclined to further my “fresh start” by leaving my car at home and warming-up for my first client by walking to work at 6:30 AM.

In a skillet, sautee:
- 2 peices of turkey bacon, sliced into thin strips
- 1/2 bell pepper, diced
- 1/4 yellow onion, diced
- 1 serving garlic-marinated mushrooms (available at Trader Joe’s)
In a separate skillet, sautee:
- 4 scrambled egg whites
Once Cooked, combine ingredients into a bowl and enjoy!
