Buffalo Chicken & Cauliflower Casserole

Looking to spice-up your work week with minimal time in the kitchen, a few simple ingredients, and little dish-washing?  Man oh Man, do I have the best recipe(s) for you!!! There are a couple of different ways to prep this dish. I’ll start with the larger portion and simplify the recipe from there.

Ingredients:

  • 1- 1 lb bag of Fresh Cauliflower Rice (Available at Trader Joes, Whole Foods, & many other grocery stores)
  • 2 Cups Carrots, diced or julienned (Available at Trader Joes)
  • 2 Cups Celery, diced
  • 2 lbs Chicken, cooked and shredded (See below for preparation tips)
  • 1 Tsp Garlic Powder
  • 1 Cup Hot Sauce (I suggest Frank’s Red Hot or Crystal Hot Sauce. Both can be purchased online or from Safeway, Ralph’s, or Pavilions. These brands contain minimal ingredients and are Whole 30 Approved).
  • 1 Cup Mayonnaise (Avocado-based mayonnaise by Primal Kitchen or by Sir Kensington’s, available online or at most health food stores)
  • 1 Tsp Salt
  • 1/4 Tsp Ground Black Pepper
  • 1 Cup Chicken Broth (Optional)

Method:

For the Chicken:

  1. Place 2 lbs of raw, thawed chicken breast in a slow cooker
  2. Add 1 cup of chicken broth
  3. Slow cook for 4-6 hours
  4. Drain juices and shred chicken with your fingers
  5. Set shredded chicken aside in a large bowl

For the Casserole:

  1. Preheat oven to 400 degrees
  2. In a large bowl, combine riced cauliflower, carrots, celery, garlic powder, salt, and pepper
  3. Add the shredded chicken and mix well
  4. In a separate bowl, stir together the mayonnaise and Hot Sauce
  5. Pour the sauce into the chicken mixture and combine
  6. Pour entire mixture into a casserole or pyrex dish, making sure to coat the dish with a fat-free coconut oil cooking spray beforehand
  7. Bake covered in foil for 45 minutes, then uncover and bake for an additional 15 minutes

The Quick (No-Bake Version)… and for those who dislike Cauliflower…

  1. Cook the chicken as stated above OR shred 2 lbs of precooked rotisserie chicken with your fingers
  2. In a large bowl, combine chicken, raw carrots, raw celery, garlic powder, salt, and pepper
  3. In a separate bowl, stir together the mayonnaise and Hot Sauce
  4. Pour the sauce into the chicken mixture and combine
  5. Serve over 4-6 oz of raw, deveined kale lettuce leaves, adding a bit of additional hot sauce as dressing.
