Recipe: Lauren’s Lean-Muscle Meatloaf

I love this dish because it’s high in protein, low in fat and carbs, gluten-free, and can provide me with lunch and dinner for 3-4 whole days! I enjoy some steamed or pan-seared green beans as a side-dish. Enjoy!
Ingredients
  • Olive oil cooking spray
  • 1 cup kamut flakes cereal or Amaranth Flakes (Whole Foods), crushed
  • 2 pounds ground turkey breast -99% fat free (Trader Joe’s)
  • 1 cup sliced green onions
  • 3 stalk celery, finely chopped
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 (6-ounce) can tomato paste
  • 1 egg, lightly beaten
  • 1/2 teaspoon dried thyme
  • 
1/2 teaspoon dried marjoram
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 
1 teaspoon salt (optional)
  • 1/4 teaspoon pepper

Method

  • Preheat oven to 400°F. Coat an 8-inch loaf pan with olive oil cooking spray and set aside. In large bowl, gently combine cereal, turkey, green onions, celery, yellow onions, garlic, tomato paste, egg, thyme, marjoram, oregano, basil, salt and pepper. Transfer turkey mixture to prepared pan and bake for 45 minutes – 1 1/4 hours, or until internal temperature of meatloaf reaches 165°F. Set aside to let cool briefly, then slice meat loaf and serve.

  1. I made this and it came out great. I added a Middle-Eastern style yogurt as a sauce to give it a tangy taste. The M-E style yogurt is basically non-fat yogurt mixed with minced garlic and fresh mint leaves.
