PROTEIN PANCAKES- Serves 2

INGREDIENTS:

  • ΒΌ cup rolled oats (or instant oats)
  • 2-3 egg whites
  • 1 scoop vanilla protein powder
  • 1/3 cup non-fat cottage cheese
  • 1 tbsp olive oil (or grape-seed oil)
  • Cinnamon to taste
  • Optional: 1 cup blueberries OR 1 banana sliced

METHOD:

  • Mix oats, egg whites, protein, and cottage cheese in a blender until smooth. Add fruit, if desired.
  • Refrigerate mixture for 3 minutes while heating a pan over medium heat.
  • Pour 1 tbsp olive or grapeseed oil into pan until pan is hot.
  • Place 2 protein pancakes onto pan and let cook for 2-3 minutes/side or until golden brown.
