Recipe: Chicken Piccata Meatballs with Mashed Califlower & Green Beans

This recipe is delicious, gluten-free, and very keto. It serves 2 or makes for great leftovers. The ground chicken can also be replaced with ground turkey. Enjoy!

Ingredients:

  • Half a head of cailiflower
  • 4 oz marscapone
  • 1 shallot
  • 1 lemon
  • 1/2 lb green beans
  • 3/4 oz parmesan
  • 1 package of chicken broth concentrate (I prefer the savory choice brand which can be found on Amazon in a 12-pack)
  • 1 oz capers
  • salt & ground pepper
  • 1 large egg
  • olive oil
  • butter

Method:

  • Make Mashed Cauliflower: Cut half of the cauliflower into 1-inch florets. Fill a medium sacepan with salted water; add cauliflower. Cover; bring to a boil. Simmer until tender, about 15 minutes. Drain cauliflower well; return to saucepan. Use potato masher or fork to mash cauliflower with 4 oz marscapone until combined. season with salt, pepper, and dill. Cover to keep warm.
  • Prep Ingredients: Finely chop shallot. Zest lemon, then squeeze 2 tablespoon of lemon juice into the same small bowl as lemon zest. Trim green beans. Finely grate parmesan into a medium bowl. To the bowl, add ground chicken (or ground turkey), half of the shallots, 1 large egg, 1/2 teaspoon salt, and a few grinds of pepper; stir to combine (mixture will be wet).
  • Brown Meatballs: Preheat broiler with top rack 6 inches from heat source. Heat 1 tablespoon oil in a medium nonstick skillet over medium-high. Use your hands to make 10 (2-inch) mounds of chicken mixture and transfer to skillet. Cook, turning occasionally, until browned all over but not cooked through, 4-5 minutes. Transfer meatballs to a plate.
  • Make Sauce: Add remaining shallots to same skillet; cook, stirring, over medium-high until lightly browned, 2-3 minutes. Add broth concentrate, lemon zest and juice, capers, and 1/2 cup water. Return meatballs to skillet; bring sauce to a simmer. Cook, basting meatballs with a spoon, until sauce is thickened and meatballs are cooked through,3-5 minutes. Stir in 2 tablespoons butter.
  • Broil Green Beans: On a rimmed baking sheet, toss green beans with 1 tablespoon oil and a pinch each of salt and pepper. Broil green beans on top oven rack until tended and lightly charred, about 5 minutes (watch closely as broilers vary).
  • Serve: Serve mashed cauliflower topped with chicken (or turkey) meatballs and sauce and with green beans alongside. Enjoy!
