Recipe of the week: Shrimp and Avocado Ceviche Cups
Ready to lose weight and enjoy what you eat?!? Enjoy a little protein and a little fat without and consuming any calories from starchy carbohydrates or dairy products! If you are a pescitarian, then you will love this one!
Ingredients:
- 1 lb cooked shrimp, finely chopped
- 1 red bell pepper, chopped
- 1/2 small red onion, finely chopped
- 1 small cucumber, seeded, and finely chopped
- 1/4 cup fresh lemon juice (2 lemons)
- 1/4 cup fresh lime juice (2 limes)
- 3/4 cup chopped cilantro
- 1 tbs chili powder
- 1/4 tsp sea salt
- 4 large endives, separated (about 40 leaves)
- 1 semi-ripe avocado, finely chopped
Method:
Ceviche
- Place shrimp in large glass bowl
- Add bell pepper, onion, and cucumber. Stir
- Add lemon and lime juice, 1/2 cup of cilantro, chili powder, and salt. Combine
- Cover and refrigerate for 15-30 minutes
Endive (you may also sub 1/4-inch thick cucumber slices)
- Place endive leaves on a serving tray
- Carefully stir avocado into ceviche
- Transfer 1 tbsp of the ceviche into each endive leaf
- Sprinkle leaves with the remaining cilantro
- Enjoy!
