Recipe of the week: Shrimp and Avocado Ceviche Cups

Ready to lose weight and enjoy what you eat?!? Enjoy a little protein and a little fat without and consuming any calories from starchy carbohydrates or dairy products! If you are a pescitarian, then you will love this one!

 

Ingredients:

  • 1 lb cooked shrimp, finely chopped
  • 1 red bell pepper, chopped
  • 1/2 small red onion, finely chopped
  • 1 small cucumber, seeded, and finely chopped
  • 1/4 cup fresh lemon juice (2 lemons)
  • 1/4 cup fresh lime juice (2 limes)
  • 3/4 cup chopped cilantro
  • 1 tbs chili powder
  • 1/4 tsp sea salt
  • 4 large endives, separated (about 40 leaves)
  • 1 semi-ripe avocado, finely chopped

Method:

Ceviche

  • Place shrimp in large glass bowl
  • Add bell pepper, onion, and cucumber. Stir
  • Add lemon and lime juice, 1/2 cup of cilantro, chili powder, and salt. Combine
  • Cover and refrigerate for 15-30 minutes

Endive (you may also sub 1/4-inch thick cucumber slices)

  • Place endive leaves on a serving tray
  • Carefully stir avocado into ceviche
  • Transfer 1 tbsp of the ceviche into each endive leaf
  • Sprinkle leaves with the remaining cilantro
  • Enjoy!
