Recipe: PB2 & Sugar-Free Jelley Egg White Scramble

The bad news: I am constantly craving a PB&J sandwich!

I purposefully don’t keep peanut butter, gluten-containing products, or sugar (other than fresh fruit and sugar-free items) in my home. Being the binge eater that I am, such products are dangerous to have at hand.

The good news: I can still have my PB&J, get my late-night protein in, and feel satiated without feeling like I’ve wrecked my diet for the week.

This is my current favorite late night snack that allows me to feel naughty and allow my body to continue to look nice:

  • 4-6 freshly cracked egg-whites (64-96 calories) beaten with:
  • 1 serving PB2 (45 calories)
  • 1 serving Smucker’s Sugar Free Strawberry Preserves (45 calories)

Just spray your favorite pan with fat-free cooking spray and scramble this late-night, protein-rich, appetite savoring recipe before bed-time. Sprinkle your scramble with a little cinnamon to further decrease tour late-night appetite. Enjoy eating every bite of it without feeling the guilt from your typical late-night binge behaviors!
